Gourmet Inspiration: elevating local flavors, one bite at a time

At Inspiration Gourmande, every creation is much more than just a sweet treat: it is a story of passion, local terroir, and encounters. Behind this project is Julien Bonnel, a passionate pastry chef who has chosen to put local producers and transparency at the heart of his approach. In this interview, he shares his journey, his inspirations, and his vision for authentic indulgence.

What was your background before launching Inspiration Gourmande?
I started by studying for 6 years in the south of France, then came here to work as a head pastry chef for a bakery-pastry shop that had just opened on the South Shore of Montreal. At the same time, I taught classes for Ateliers & Saveurs and began slowly launching Inspiration Gourmande.
Subsequently, I joined the team at Farine & Cacao as a sous-chef, a pastry shop recognized among the 25 best in the world to discover. This experience allowed me to broaden my vision and expertise. I then continued my journey at the Cacao Barry Chocolate Academy, while continuing to develop my own project, which became Inspiration Gourmande.
What inspired you to create Inspiration Gourmande?
I created Inspiration Gourmande to put transparency and local producers back at the center of indulgence. Too many companies work with the same industrial suppliers, whereas in Quebec, we have an incredible wealth of passionate small artisans. My goal is simple: to highlight their expertise through authentic creations that tell a story in every bite.
Can you tell us about your process for creating a new product? What are your sources of inspiration—flavors, textures, combinations, traditions, etc.?
Every creation begins with meeting a producer and learning about their expertise. As with our boreal caramel, I start with a local raw material and seek to enhance it without over-processing it. The idea is simple: to offer an authentic treat that tells a story while remaining accessible to everyone.
How do you select your ingredients?
We prioritize selecting our ingredients from the Greater Montreal area in order to support local producers. Of course, some products sometimes require using larger suppliers, but our approach remains the same: to seek quality and proximity. Very often, these encounters happen naturally, whether during a trade show or thanks to a customer who tells us about a small local business.
What are you most proud of since the creation of Inspiration Gourmande?
What I am most proud of is having succeeded in building real relationships with our suppliers. Beyond just buying their products, I give them visibility through our creations, our social media, and the fairs we participate in. This allows me not only to highlight their work but also to show our customers the wealth and quality of local producers.
What is your favorite product, and why?
The "Ourson Gourmand" (Gourmet Bear) is undoubtedly the iconic product of Inspiration Gourmande. It is a vanilla marshmallow covered in chocolate, made with honey from Montérégie. But beyond the indulgence, it carries a personal dimension: as a child, my parents often gave me marshmallow bears when coming home from school, and it was a moment I cherished very much. By recreating it today with high-quality local ingredients, I wanted to convey that same emotion.
